Caleb Phillips knows what it’s like to go without: as a child he spent time in and out of shelters. He’s in far better times now but having lived on food bank and shelter meals, he knows how poor their food can be. He cofounded a nonprofit that’s fixing this problem by coupling it with efforts to redirect vast quantities of healthy, edible, fresh foods that are thrown away every day. It’s environmental; it’s smart, and it’s helping a lot of people in need get healthier food. In just one year Boulder Food Rescue has distributed over 160,000 lbs of good food to 39 organizations in Boulder County.
